9X23Guy
Heat is by far far the closest thing I've ever seen to the real thing. The Town wasn't bad either but Heat will always be my top choice.

Shadowrider
Maybe not the most realistic but Scarface just for the "say hello to my little friend" line and Heat. Edit: And anything with Antonio and Salma in it. lol Edited March 9, 2013 by Shadowrider

Nik Habicht
Shooting -- Heat, The Way of the Gun, Ronin, even Collateral "Even" Collateral? From what I remember not enough of the shooting, compared to the others..... Though it does have a really nice speed-rock scene....

JimmyZip
For fighting I don't want realism, or blood. Who needs that when you can get fight scenes with the Duke in Donovan's Reef and The Quiet Man? If I want reality I will watch a good documentary or some YouTube footage of whatever. Then there are all the Kung Fu movies we watched every weekend during Kung Fu Theater. Man that was the best during the summer to come in from a hot morning of whatever and have popcorn and Hi-C and watch Kung Fu theater. Good times. Heat is one of my favorites just for the way it was shot. Every shooting is shot well even the showdown at the end is really good. Then there was the first La Femme Nikita which set the bar very high and set off a flurry of copies. But for a pretty good time you cant lose with The Professional. The French action directors do very well.

fiddler
There is a great bar fight in Serenity when Summer Glau's River is activated.
Powder Finger
The Wild Bunch It's a good one but IMO the best part is the line "How'd you like to kiss my sister's black cat's a$$"
