You might try Accurate Plating...https://apwcogan.com/

I would not recommend APW based on past experience.  Sent them an SV for DLC refinish.  Their work was marginal, delivery time was longer than quoted, and they billed for more than what we agreed.

Thanks for the input. Have you ever heard of Vulcan Machine Works? That's who Hayes recommended.

I have none.  Here are some other options.  Again, I have not used them.  I'm searching just like you. Let me know what you end up doing.

They don't list 1911s but can't hurt to ask.

Deep river customs might do it.  They converted my SV Infinity 5.4 9mm to open major when no else wanted to.  I called SVI and was told it wasn't possible.  Sent the complete gun to Dan Bedell and he said he couldn't do it.  Deep River Customs stepped up to the plate.

UPDATE.

After a lot of rejections, one gunsmith explained why no one wants to work on an Infinity: it's the replaceable breechface. It makes cutting the slide for an optic very complicated and easy to screw up. As a result, no one wants to touch it (after looking at it, I understand why.)
Instead, I've ordered a rear sight replacement plate for an SRO. It's not quite as low as a direct cut, but it's close, it's a cheap part ($55), and I can install myself. It's a little ghetto but I'll shoot this for a season and if I like it, will just have a complete slide made; or maybe a new gun. Thanks for the input, everyone!

I'm doing that now with a 9mm Edge for Lim Optics and it works well.  The Bitchin Gun Guy cosplayers turn their noses up, but then they get beat by some geezer with a homemade dovetail dot mount... :D

I hate that you had to go that route.

I received it, installed it, and it looks terrible. I'm taking if off and continuing on my path of finding a gunsmith willing to do it or get a new gun (If I can find a DWX in stock, that's what I'll go with.)

one problem with  the RMR/SRO/Holosun footprint is the mounting screw holes are very wide, to the point that if your pistol has rear serrations the out side of the screw will be exposed. I didn't want to have one of the generic interchangeable mounting plates that are not shaped to match the optic so I made my own.

Most other Optics have a better mounting screw spacing so directly milling into the slide is easy
