Hatchet, only you know your father, are all the ammo cans labeled with the load?
Personally I would trust my grandpa's loads if they were labeled, but I wouldn't take on the liability of giving them to anyone.
Because for most (myself included) slide lightening is a fashion statement. I lightened the slide of my CZ with some cool/unique longitudinal ball cut/slots. I took all the weight 1.8oz from the front and it really changed the character of the recoil impulse in a way I didn't care for too much. I liken the difference to shooting 115gr vs 147gr bullets; a lightened slide is a sharper, snapier recoil impulse vs a softer push.
Cha-lee did some experimentation with different approaches to slide lightening and came up with some good intel: http://www.brianenos.com/forums/index.php?showtopic=183028&view=&hl=&fromsearch=1
I think next time I play with slide lightening I'll start by taking a half ounce out of the back and go from there.
Back to your question: when drilling holes in your slide you need to do something to keep the insides of the holes from rusting; cold blue works OK, but doesn't look the greatest.
CZ 97B mags are the same size as large frame Tanfo, but that won't do you much good; they're not as wide as most double stack large frame mags. CR Speed Versa Pouches work, but they're pretty pricey. I use knock off CR Speed pouches sold for air soft at a third the price.
What type of grips are you looking for? checkered wood? rubber? These ones would work if you cut about a quarter inch off the length: http://www.ebay.com/itm/EAA-Witness-Grips-Lava-Rock-Texture-/281166731827?pt=LH_DefaultDomain_0&hash=item4176d7da33
I now understand your question. If you have an EAA Limited it should indeed be large frame so stay away from anything which has TZ in the description (TZs are small framed). The Limited Pro or Stock III grips on that site are the ones you want, the Limited grips will be too short and the Match grips too long.
Depending on shipping costs you might do better asking around here for someone to sell you the stock grips from their Limited Pro or Hunter large frame.
You can use this one with the long SP01 mags and standard/extended base pads: http://czcustom.com/cz75magwellidpa.aspx
You'll also need one of these: http://czcustom.com/cz75fullsizemagwellplug.aspx
You can also use CZ75 thin grips, but I would just sand down some wood ones and epoxy on some grit. Standard length mag tubes won't work without major mods.
That's part of it, but in a DA/SA pistol, the disco catches the trigger on the return stroke, by shortening the sear leg with the same disco you would get slack in the SA pull, but no shorter stroke.
