Apex trigger in CO legal?

Yea, that's correct, those count as internal mods.

I know this for fact that yes, the internals can be switched however any visible physical modification, like an APEX flat faced or aluminum trigger, bumps you out of Production. I didn't realize this 3 days ago when I shot a small match at the NRA.

What about carry optics?

Carry optics have the same restrictions as Production. Triggers (externally visible part) can only be replaced with OFM parts. S&W has never installed any Apex parts in a M&P. So the answer would be "no".
