Mudfish is a pretty unpalatable fish, but I've found a recipe that just might work. Cedar planked Mudfish cooked on an outdoor grill. 1- medium to large skinned and fileted mudfish. 1- tablespoon salt 1- tablespoon black pepper 3- tablespoons extra light olive oil 1- clove garlic, minced 1- tablespoon fresh thyme 1- tablespoon fresh rosemary 1/2 teaspoon onion powder 1/2 teaspoon dill Soak the mudfish overnight in a slightly salty brine in the refrigerator. Soak the cedar plank in a bucket overnight. Using the olive oil, rub the cedar plank down so the fish will not stick. Rub the remaining oil onto the fish. Place the fish on the plank and sprinkle with remaining salt, pepper, garlic, thyme, onion powder, and dill (to taste). Let this sit for 2-3 hours in the refrigerator. Get the grill to 280 degrees Place the plank with the mudfish filet in the center of the grill and turn the heat down to about 250 degrees. Depending on the thickness of the filet, it should take about 12 minutes to cook. Once it's done, remove the mudfish filet from the plank and eat the plank, throwing the mudfish away. Fill a large tumbler to the brim with Coke (or Pepsi if you aint' woke), Dump the cola and quickly fill the tumbler with the Rum of your choice.
