However, we need to be specific when we talk "documents". Are they .txt, .rtf, .doc, .pdf... You would have to do those steps for each file type. Ok.. another way as well. Single click on the file then press command (apple) " I " on the menu that pops up, half way down, select the "Open With" option, and choose pages. Be sure to click the "Change All" button as well. They are Pages documents that I save as word Documents so that people using PCs can see them. If I need to change anything I open them with Pages, change what I need to change and save as word again.
