EEH Posted June 27, 2011 Author Share Posted June 27, 2011 Cook in dutch oven--1 table spoon unsalted butter 1/4 cup morel ,or baby bella mushrooms,small dice 1/4 cup shallots 1 clove garlic,minced 1/2 cup your fav,burbon,or brandy 2 cups heavy cream kosher salt cayenne pepper melt and brown butter,add mushrooms saute 3,4 min..add shallots and garlic,stir 2 min,,add burbon,it will flame up,let it burn off and reduce by 2/3 add cream stir constantly 3,4 min until it thickens enough to coat the back of wooden spoon,,add salt and cayene at end,or it will be to salty,,put lid on to keep warm,,hope this helps.
