There's in theory some benefits to running a polymer grip paired with a heavy steel/brass magwell. Gives you a much higher moment of inertia and lower cg for the same overall weight compared to a metal grip. Hard to say how much of a benefit that is in practice, especially if a metal frame physically fits you better than polymer.

Coming from a glock, I'm very interested in one for all of the little improvements you've mentioned, but particularly for being able to easily customize the grips. Most of the other fcu style guns have a rather high bore axis or poor trigger, so this seems like a welcome alternative. Any idea how the trigger compares to a pdp or canik?
