You can pull rounds, weigh and inspect powder and with chrono data come up with something similar but why? Do they really feel that different from everything you currently load?

Doubt it...

The goal is to build ammo that closely resembles the performance. I.e. The way the gun recoils and returns. So I'm mostly interested in the speed of their powder. I suppose to that end I could set up lines of powder and do semi scientific burn rate rate test.

chrono their loads, then pull a bullet weigh the charge...  Now you know they use X grs to make Y velocity in your gun.   A couple test runs of reloads with same bullets, using a couple different powders should have you be able to narrow down burn rate.
