2011 build on carbon steel frame

So I haven't really been able to find anything on this topic and I know there is a vast amount of information on the forum so it may be out there somewhere....anyways I am building a 2011 on a new Jem Guns frame and slide that just showed up and I now need to get the rest of the parts together to finish this thing up in the next year or whatever it takes. So when i am trying to get things like thumb saftey, slide stops beaver tails etc it seems like most parts are availible as either stainless or blued. Is there an advantage/disadvantage to using one or the other?  I am not planning on blueing the gun when its completed, probably cerakote or somthing (haven't dug into that too much yet) But I am assuming that the stainless parts would be more raw or unfinished, but it is a different type of metal so i dont know if that would effect the finish/function of anything. Hope that my question kinda makes sense, it's starting to feel like I'm rambling so I'll just see what kind of info I can get from you guys. Thanks in advance!

Carbon or stainless makes little difference in the internals.  Just make sure to use billet or barstock parts.  If you bought a steel grip frame, buy the PT EVO grip it was made for.  If you bought a poly grip frame, buy the JEM grip safety.  You won't have to blend it in as much.  You can buy that at EGW, along with almost everything else you need.  Good stuff.
